I've read that a Cajun is someone who celebrates life through music, dancing, and hard work. I'd add food to that list! Bob and I are in Lafayette, Louisiana, the heart of Cajun country. Chicken-andouille gumbo. Corn macque choux. Crayfish etouffee. Boudin. Blue
point crab cakes. Oyster po-boys. Shrimp and grits. Stuffed alligator. Food is definitely a part of the Cajun culture; we are making the most of it!
